What makes us different:
We highly recommend ordering an Omakase set to get the full Kasen (pronounced kah-SEN) experience.
We only serve fish that is very soft.
Sushi rice, which we believe is just as important as the fish, is served warm and loosely packed
Our sushi is simple, yet balanced. Most dishes will already have sauce or toppings, so dipping them into soy sauce is unnecessary.
Sushi should be eaten as soon as possible while the rice is still warm, fish freshly cut, and seaweed crisp (for handrolls).
About Master Murata:
Shinji Murata was born in Fukuoka, Japan. It was here where he first started his career in sushi, first becoming an apprentice in his early adult years.
In 1973, he moved to Los Angeles, California. He would then continue honing his craft while working at several sushi restaurants over the next few decades.
After three decades in the industry, Murata opened his own restaurant in 2002, Hiko Sushi.
At Hiko, he implemented his own unique style of Omakase Sushi to set himself apart from the others. An L.A. Weekly review mentions, "You will notice that the rice is not just warm, but hot, and that the soft fish melts into it in your mouth, enveloping the sweet grains almost like a sauce."
In addition to hot rice and soft fish, Master Murata only uses the highest quality seafood and other ingredients, such as wasabi, ginger, and nori.
Hiko Sushi has been a resounding success, and it is now being run by his family as he splits his time between Los Angeles and Vietnam.
While visiting Japan in 2012, Master Murata decided to take a short trip to Ho Chi Minh City, Vietnam.
He fell in love with the city and its people, and while just a dream, he hoped to someday open his very own Omakase Sushi restaurant there in the future.
In 2018, the dream became reality as Kasen opened its doors in Saigon to the public.
